Brown bananas in our house means it’s time for banana bread.
I came across an easy recipe for this family favorite some time ago. I love it because there is only a handful of ingredients that go into making it. I hate anything too complex! This recipe is easy enough for the little ones to take charge in the kitchen.
4 ripe bananas
1/3 cup of melted butter
1 cup of sugar
1 egg beaten
1 tsp of vanilla extract
1 tsp of baking soda
pinch of salt
1 1/2 cups of flour
preheat oven to 350 degrees
spread a small amount of butter on the bottom of a loaf pan then line it with parchment paper and spray the paper with a nonstick cooking spray. (I read this trick in a cookbook and since then I have never had anything get stuck in a pan again)!!!
Mix butter into mashed bananas. Mix in the sugar, egg and vanilla. Sprinkle the baking soda and salt over the mixture. Add the flour last and mix well.
You can also add in any extras that you may like….. My crew decided to throw in some peanut butter chips. It was an excellent choice!
